There have been many, many studies done on the curative and strengthening properties of honey that go against our understanding of straight fructose and glucose.  For instance, the University at Copenhagen found that over 70% of chronic arthritis sufferers were relieved of pain from small but regular dosing of honey; Weekly World News in January of 1995 reported that diabetes patients could safely take honey doses therapeutically, and recent research in Japan and Australia have actual cases of advanced stomach and bone cancer being cured. (sorry, I don&#039;t have the exact reference).

More and more research is being done with promising results, however, as in all purchasing decisions, pure products are preferred over refined, and with honey, if the bees collect nectar from flowers that are sprayed with pesticides, the resulting honey would be undesirable.

Where I live in Maine, the bees pollinate using wild clover and leave a very mild flavor.
